We take advantage of the rich nature of Izumo and carefully make delicious soy sauce that enhances the seasonal taste. Due to the everyday use, we want to make sure you make a good choice with a relaxing taste.

製造工程

厳選した小麦を炒ります。

2.

厳選した大豆をNK缶(圧力釜)で蒸します。

3.

蒸した大豆と炒って砕いた小麦と麹菌とを混ぜ、温度や湿度を一定に保ち約46時間をかけて麹を作ります。昔から「一麹(こうじ)、二櫂(かい)、三火入れ」と言われ、おいしい醤油をつくるには、まず良い麹をつくることが重要です。
醤油づくりの中で一番神経を使う作業です。

出来た麹と塩水を混ぜ1~3年かけてじっくり発酵・熟成させます。原材料(大豆、小麦)の配合を同じにしても、それぞれの醤油蔵によって気候や環境、昔から蔵に住んでいる微生物(蔵付き菌)が違うことによって蔵特有の味や香りが生まれます。それを「蔵ぐせ」といいます。

「圧搾」。出来た諸味を搾ります。時間をかけゆっくり搾ります。

出来た生醤油を調合し、火入れ(殺菌、香りを引き出す)、濾過(濁りを取り除く)を行い、それぞれの容器に詰めラベルをはります。

Manufacturing process

Roast carefully selected wheat.

Steam carefully selected soybeans in a pressure cooker (NK Can).

Mix steamed soybeans, roasted and crushed wheat, and koji mold, and keep the temperature and humidity constant for about 46 hours to make koji. The word “koji” means soybeans and wheat with their surface covered with koji mold. It contains various enzymes that greatly contribute to the following moromi fermentation and maturation process. Since ancient times, it has been called “Ichi Koji (koji making), Ni kai( stirring that stirs moromi), and San Hire (process of applying heat to squeezed soy sauce)”, and in order to make delicious soy sauce, it is important to make good koji first.
This is the most sensitive work of making soy sauce.

Mix the malted rice, salt water, ferment, and age it for 1 to 3 years. Even if the raw materials (soybean, wheat) are mixed in the same way, each soy sauce storehouse has different climate, environment, and microorganisms (bacteria attached to the storehouse) that live in the storehouse for a long time. It is called “Kurakuse” which means “its own original flavor.”

“Squeeze”. Squeeze the resulting moromi. Squeeze slowly over time.

The raw soy sauce is heat-treated to sterilize and bring out the aroma. Then it is filtered (remove turbidity), and put a packing label on each container.
